Blackberry-Lime Noodle Bowl w/ Avocado

Hello everyone! This is probably one of my favorite dishes that I’ve made so far. Definitely top ten!! I’m excited to share it with you!!!

Noodles, avocado, limes, and blackberries. What a great mix!

For this dish we need noodles. Any noodles will do but the recipe called for spaghetti noodles so that’s what I used. We also need baby spinach, limes, avocados, radishes, blackberries, sea salt, hemp seeds, cane sugar, and corn. I opted for frozen corn because I like to keep that on-hand and didn’t feel like cooking and shelling (the official term thanks to Mr. FBBQ and AI) corn cobs.

Start by cooking the pasta and rinsing it in cool water when it’s done. Allow the pasta to cool.

Next, we make the dressing! Super simple! In the bullet blender, I mixed avocado, lime juice, and a dash of cane sugar. I then blended it until it was smooth.

Sice up the radishes, cook the corn (if using frozen) and allow it to cool.

Ready for assembly!

Add the noodles and the baby spinach to a bowl.

Add the hemp seeds. Slice up the avocado and add that to the bowl. Top with the avocado-lime dressing and enjoy this dish, hopefully as much as I did!!
