As I made this, I realized it’s pretty similar to Zucchini Chickpea Saute. But, here goes!
This was super easy to make. It’s a good weeknight, after work meal. The original recipe called for farfalle (commonly known as bow tie), but I didn’t have that type of pasta. I ended up using whole grain fusilli because I had it on hand. Plus it sounds like fusilly and that’s just fun!
So, as we boil the pasta, we want to heat the beans as well. I used Northern beans in this case, but you could really use any variety of white bean.
Next, we want to chop up some zucchini, peppers, and little tomatoes. Add those to a pan with a small amount of water and cook them for a bit until they soften.
Unlike Zucchini Chickpea Saute, there is no pasta sauce or cheese to this recipe. Not saying you couldn’t add it, but I didn’t in this case.
Use the pasta as your base and add the veggies and beans and you are ready to eat!
I will say that the meal was a bit bland, but it wasn’t bad!
