It’s beyond officially Fall here in the Midwest! That means soup and stew!! This one was so super simple! I prepped the veggies beforehand, so all I had to do was put everything in a pot and simmer it for a bit!! So, to make this super simple soup, we will need some red beans ( I opted for dried kidney beans, which I soaked and simmered a few days ahead of time), diced tomatoes, bay leaves, paprika, carrots, celery, onion, zucchini and yellow squash, garlic, and peppers!

For the simple part: slice and dice all the veggies. Toss ’em in a pot with some vegetable stock. Add the beans and the bay leaves. Simmer. Add the diced tomatoes toward the end. Simmer a bit more. Season with paprika.

Serve warm and freeze some for later!!
