Zucchini Squash Pesto Pasta Salad

Well, Summer flew by! I like Fall, but Summer is my favorite.  It seems like we had a rainy/cooler Summer here in the Midwest.  I do have to say I’m looking forward to Halloween!  I love pumpkins and black cats, so it’s obviously my favorite holiday! 

What say we get to the recipe!  We will need some whole grain pasta, navy beans, squash, zucchini, little tomatoes, sherry vinegar, fresh basil, raw cashews, a leek, nutritional yeast, lemon juice, sea salt, and unsweetened plain plant-based milk.

Steam the squash and zucchini.  Mix them together with the little tomatoes in a bowl. Add the cooked pasta and the navy beans.  Lightly coat with the sherry vinegar. 

There are beans under there, I promise!
Noodles

In a food processor, blend the leek (finely chopped), the raw cashews (after boiling for about 10 minutes to soften up), nutritional yeast, lemon juice, sea salt and plant-based milk as needed to smooth it out.

Top the squash, zucchini, tomatoes, pasta, and navy beans with the pesto.  Garnish with fresh basil and you are ready to enjoy this amazing meal!!
