Zucchini & Squash Gyros

I have a superb treat for you today! Mr. FBBQ and I recently went to Eastern Market in Detroit and had some delicious gyros. I decided to try to make my own. I recruited Mr. FBBQ to help me make the seasoning from scratch! Let’s start with that.

So many flavors!

To make Greek seasoning we need dill weed, black pepper, ground nutmeg, marjoram, basil, parsley, oregano, ground thyme, onion powder, garlic powder, and salt.

Mix the seasonings together. It made quite a beautiful mosaic before I shook it up!

The main ingredients

For the main part of this dish we will need zucchini and yellow squash, mini-cucumbers, olives, tomatoes, butter beans, pine nuts, red wine vinegar, the Greek seasoning, and hummus. You can make your own hummus. I’ve done previous posts on making your own hummus if you are interested in doing this. For the sake of time I used store-bought. We got our zucchini, yellow squash, and mini-cukes at the Farmer’s Market. I love fresh fruits and veggies. We try to go to the Farmer’s Market as much as we can in the Summer.

Squashes

Grill the zucchini and the yellow squash after slicing it into discs and seasoning it with the Greek seasoning.

Sizzlin’ squash

Slice the mini-cucumbers and add them to a bowl with the red onion (thinly sliced) and the butter beans. Add the red wine vinegar and toss to coat.

To make the Tzatziki sauce, blend firm tofu, lemon juice, Dijon mustard, and minced garlic in a food processor. Add the dill weed last and mix it in.

The bread and the dressing

We will use pita bread to eat this. Spread hummus on the pita. Add some romaine lettuce. Add the mini-cucumber mix and some sliced tomatoes. Add the zucchini and yellow squash. Top this with the Tzatziki sauce, add the olives, top with pine nuts. You might need more than one pita.
