
Hey Y’all! Today I am bringing you an absolutely delicious (and healthy) dish! I wanted something different than a salad and pasta sounded amazing. Then we found these beautiful zucchini at the Farmer’s Market and the decision was made!! In addition to the pasta and the zucchini, we need some bell peppers, white beans (I opted for Northern Beans), diced tomatoes, and a sweet onion.

Start by cooking the pasta. While that is going, slice up the bell peppers, the onion, and the zucchini.

Cook the zucchini rounds in a pan with a small amount of avocado oil until they are browned.

Once the zucchini are done cooking, grill up the peppers and onions in the same pan.

The cooked pasta will be the base for this dish. Top that with the peppers and onions.

Next, add the zucchini. Drain and rinse the beans and add those as well. You can heat them in a pan for a few minutes so they match the warmth of the other ingredients. Same with the diced tomatoes.


Top the dish with the diced tomatoes and you are ready to enjoy!! You can always add a bit of parmesan cheese to this as well. I did. It definitely enhanced the dish!

On a side note, I would like to take a minute to talk about a recent news story that hit close to home. You’ve seen in my previous posts that I backpack and have been to Isle Royale National Park on more than one occasion. It is one of my most favorite places on earth. Recently, there was a tragedy on the island that caused the loss of two lives. While not much information is being released, I have an idea of what may have occurred. Either way, it distresses me that such a violent event took place in such a peaceful, serene, and sacred place. My heart goes out to the families of the deceased, as well as other backpackers and campers affected by the incident. I also have the utmost respect for the park rangers who probably never thought they would have to experience such a shocking and challenging situation. My next trip to the island will certainly involve honoring the sadness that occurred there.
