Wild Rice with Maple Glazed Sweet Potatoes

Thank you, Native Americans, for this delicious food!

Hello Mrs. Maniacs!  I have a very special recipe for you today.  This is a Native American dish.  At this time in America’s sad history, we are calling this Cultural Appropriation. I call it Appreciation for Other Cultures and consider this a compliment.  That’s all I will say about how ridiculous our society has become, because this is a food blog not a political one. 

What you’ll need to start

Back to the recipe! Obviously, we will need some rice and sweet potatoes!  We also want a yellow onion, garlic, mushrooms, corn, scallions, dried cranberries, sea salt and pepper, maple syrup, and lime juice.

To start, slice up the sweet potatoes. The smaller cubes, the quicker they will cook.  Bake them at 400 degrees for about an hour or until they are soft.

Add the onions, sautee

While the potatoes are baking, slice the mushrooms, onion, and garlic and cook in a saucepan over medium heat, adding water so they don’t stick to the pan.  Add salt and pepper to taste.  Lastly, add the corn and the scallions.

In a small bowl, combine maple syrup and lime juice. Whisk it together and set it aside.  Once the potatoes are almost done cooking, mix them into the maple syrup/lime juice mixture and cook them for a bit longer, allowing them to soak up the syrup.

While all of this is going on, you’ll want to cook your wild rice.  Depending on the type of rice you use, this could take a while.

Once everything is done cooking separately, add the rice to the mushroom/onion/garlic/corn/scallion mix. Top with the sweet potatoes and enjoy! 

I really enjoyed this dish. It is definitely going on the list of favorites!!!
