I’m back!!!! It’s been a busy summer for Mr. FBBQ and I. We took a trip to historical Boston. Mr. FBBQ and I went to the JFK Museum, did the Freedom Trail, went to Concord and Lexington, did a Boston Tea Party Museum tour… It was great! We also went to New Hampshire and saw a concert with our friends and went to Portsmouth and Newburyport. Mr. FBBQ has been travelling a lot for work too.
BUT- I managed to find some time this weekend to bring you a new recipe! This one turned out so delicious! The picture below shows a salad dressing but I didn’t end up needing it! This dish had so much flavor and taste!
To make this recipe we need whole wheat spaghetti, cannellini beans, a sweet onion, tomatoes, spinach, mushrooms, and some black olives. I thought I might use the avocado too but decided to save that for me next recipe. Avocado would be really good on this dish though!
Start by grilling the onions and mushrooms in a pan with some water. While that is happening, cook the spaghetti. Once the mushrooms and onions are near done, add the spinach to steam.
While the stove is busy, cut the little tomatoes in half, drain the black olives, and drain and rinse the beans.
The spaghetti will be the base for this dish. Top that with the onions and mushrooms.
Add the beans, the tomatoes, and the olives.
