It’s salad time!! A lot of people say they don’t like salads. I think they’re just doing it wrong. Salads are more than iceberg lettuce and tomatoes (though I do love tomatoes). There are so many things you can add to a salad to make it interesting! Grains and seeds and beans and fruits just to name a few!
But let’s focus on today’s salad. We will need some wheat berries. I had einkorn and spelt berries on hand so that is what I used in this case. We will also need chickpeas, sherry vinegar, paprika, Dijon mustard, a red onion, an orange, garlic, tomatoes, and some form of greens. I used baby spinach and arugula, as well as pea shoots that we got at the Farmer’s Market.
We start by cooking the wheat berries, as they will take a while to cook. While those are cooking, we can create the base for this salad. The base will consist of the greens. I threw some other mixed greens from the Farmer’s Market in there. We will also add the tomatoes and onion. I added some cucumbers and carrots too. Can’t go wrong with extra veggies!
Next, we will make the dressing. This dressing has quite a kick to it. You won’t need much! Whisk together the Dijon mustard, the sherry vinegar, the paprika, and the garlic.
Once the wheat berries are done cooking, allow them to cool. Add the berries to the base and add pieces of orange. I threw some blueberries in there too. Can’t go wrong with blueberries!! Add the dressing and you are ready to eat!
