Watermelon Pistachio Salad

Got a good one for y’all today! This salad was absolutely delicious and might be one of my new favorites!  Obviously, we will need some watermelon.  The recipe called for scallions, but I forgot to buy them so I used shallots instead because I had them on-hand.  We will also use radishes, basil leaves, lime juice, honey, salt and pepper, olive oil, baby spinach, and pistachios!  I also threw in some blueberries and little tomatoes.

While making this salad, I was supervised by Pippa (as seen in the photo).  Mr. FBBQ decided to see if cats will eat watermelon.  Pippa is usually game to eat pretty much anything, and did not disappoint!  She didn’t end up eating it, but did lick it and spit it out a couple of times, leaving a watermelon mess on the kitchen floor that I, of course, had to clean up.  Itty Bitty came by and decided to check it out as well, but quickly lost interest.  Ultimately, it was determined that cats do not like watermelon.

Start out by toasting the pistachios.  While this is happening, you can put the baby spinach in a bowl. This will be the base of the salad.  In another bowl, mix up the olive oil, the scallions (or shallots), the finely chopped radishes, the thinly cut basil leaves, lime juice, honey, salt and pepper.  Lastly, add the watermelon to this mix and stir everything up good so the watermelon is coated.

Add the blueberries and little tomatoes to the spinach, cover this with the watermelon mixture, top with pistachios and mix everything up together. 

This salad had a variety of tastes and textures.  The watermelon and blueberry, along with the honey, added sweetness. The pistachios a bit of nuttiness and crunch.  The lime juice added tart.  I’ll definitely play around with this recipe and see what else might go well with it. If I had cucumbers I would have definitely added those.
