Hey there y’all! I realize I have posted VIndaloo Potatoes before, but they weren’t sweet potatoes! I must say, this dish turned out so good! I shared it with several friends of mine, because there was a lot!.
Let’s gather our ingredients! Obviously we need potatoes. Sweet. Yukon. Red. Diced tomatoes too. As far as seasonings go, mustard seed, ground cardamom, ground cloves, bay leaves, paprika, cumin, and sea salt. Lastly, cilantro for a topper!
Cook the onions in a pan until they are browned.
Cut the Redskin Potatoes and the Yukon Gold Potatoes into cubes. Boil them in a large pot of water until they are softened.
Peel the Sweet Potatoes and cube them. Cook the Sweet Potatoes in the steamer. You can also boil these in a pot.
Dice up some garlic cloves and add that to the onions while they cook.
Once the potatoes are done cooking, drain the water and put them back in the pot.
Add the garlic and onions.
Add the diced tomatoes.
Add the sweet potatoes.
Stir all your seasonings into a small bowl. Mix it up well. Gradually add the seasoning to the dish as you mix together the potatoes, onions, and tomatoes.
Garnish with cilantro and enjoy! You can even freeze some of this dish to enjoy later!!
