Vegetable Soup w/ Grains, Beans, and Seeds

Hello, everyone!  We have a little bit of everything in today’s dish! We have veggies. And grains. And beans. And seeds.  The title was kind of a spoiler.

I have to give a huge shoutout to Bob’s Red Mill, who made the fantastic mix of grains, seeds, and beans that we used in this recipe. I love Bob’s Red Mill.  If you are looking for quality products, look there.  There are baking mixes, flours, grains, wheats, and a variety of other stuff you can use in your day-to-day cooking.

Look at Bob. He looks so happy and wholesome.

This was a super-simple soup to make.  It’s been great soup weather here in the Midwest. Chilly and rainy.  To start, I could have soaked the bean/grain/seed mix but I didn’t.  Instead, I boiled it for 90 minutes. This worked wonderfully. Sometimes, I feel like soaking beans doesn’t soften them up enough.  Boiling them for that long sure did! Our whole kitchen was steamed up, but it was actually kind of nice due to the cold weather outside!

Pot o’ beans

While the mix was boiling, I added celery, carrots, zucchini, yellow squash, and onion to another large pot and steamed them in some water to soften them up.  Once the water was gone, I added a can of diced tomatoes and vegetable broth.  Once the beans/seeds/grains were softened, those went in as well.  I let that whole mixture simmer for about 20 minutes and added some dry seasonings-parsley, oregano, basil, and a couple of bay leaves.  A dash of sea salt and you are good to go!  A special note on the sea salt.  Several posts ago I told you how Mr. FBBQ likes to drink lemon juice straight from the bottle-you know, those little lemon-shaped bottles you can buy it in? So, we established back then that he is a big ‘ol weirdo.  It has now been confirmed.  I watched my adorable, perfect husband pour out some sea salt into his palm from the jar I had out to use in this recipe.  I watched this amazing, super-smart man eat the sea salt direct from his palm.  I, of course, proceeded to ask him if he wanted some lemon juice with that.  Big. ‘Ol. Weirdo.

?ForensicBBQ commentary: Okay, I don’t drink lemon juice, I taste it. Just a little bit to make you feel alive. And “eating sea salt by the palmful” is a massive exaggeration. Just a pinch to know what’s like. None of the preceding commentary alleviates me from being a weirdo, however. That part is factual.

?‍⬛Mrs. FBBQ commentary on Forensic BBQ commentary: It was more than a taste. It was a drink. And why do you need to know what the sea salt is like? I’ll tell you what it’s like-it’s like sea salt. And you very well did pour salt in your palm.

Cats are eating, I’m about to!

I had enough to share and freeze some for a later date!!!
