Hello y’all! Today I’m bringing you a super simple dish, perfect for a weeknight when you get home from work and don’t want to spend a ton of time on making a healthy meal. If you prep the veggies ahead of time, this dish can be made in about 15 minutes. The ingredients are simple: onions, mushrooms, broccoli, arborio rice, and vegetable broth. Note that you can use any veggies you choose in this dish!
Cook the onions and mushrooms in a pan with some water.
While the onions and mushrooms are cooking, add the rice to a pot with some vegetable broth and let it simmer.
While the rice is simmering and the onions and mushrooms are cooking, steam the broccoli.
Once everything is done cooking, put it all together using the rice as a base.
