This might be one of my favorites so far! It was delicious, even re-heated!
First, we will gather all of our ingredients! We will need a small amount of olive oil, a small onion, garlic, little cherry tomatoes, a bit of salt and pepper, basil, vegetable stock, arborio rice, and white wine.
Cook the onion and garlic in the olive oil. While those are cooking, boil the vegetable broth with a small amount of water. Add the little tomatoes to the onion/garlic mix. Continue to cook this until the tomatoes are softened. (Toasty Tomatoes!) Add a pinch of salt and pepper to taste.
Add the rice to the onion, tomato, and garlic mixture and toast slightly. Next, add the onion, garlic, tomato, rice mixture to the vegetable broth. Simmer all of this on medium-low until the rice absorbs the liquid. Add the white wine. I chose a local Riesling (one of my favorites) for this recipe. It was an excellent choice. Simmer until the rice absorbs the wine. Drink a glass of the wine while you are waiting. (Just a suggestion)
Once all the liquid is absorbed, transfer the rice mixture to a dish. Top with fresh basil and a little parmesan cheese if you choose!
