Greetings!! Today’s post is super simple, but I thought I’d publish it because it was my first time ever grilling a cantaloupe! Mr. FBBQ declined a sample of this, stating that warm melon was unappealing. I was already having some doubts about this recipe. His comment did not help. Nevertheless, I gave it a shot. It was actually pretty good!
In the past I have made wraps with peppers and onions and black beans, often using grilled peaches. So why should melon be any different? In this case, I cut up a delicious cantaloupe that we got at the Farmer’s Market and grilled some in a pan with yellow, orange, and green peppers and some onions. Once these were toasty and browned, I put them on a bed of sprouts on a 7 grain tortilla and topped it with some Whole Foods black beans. Lastly, I squeezed some fresh lime juice on the whole thing and topped it with a little bit of cheddar cheese (which I shared with the cat, Fiona, of course).
