I cannot believe I haven’t posted this dish yet. This was one of the first dishes I mastered as a Plant-Based diet staple. So, let’s get to it!
You can use a variety of grains/rice/wheats/etc. Some options are Amaranth, Buckwheat, Barley, and couscous. I usually go with quinoa, lentils, and rice. On this occasion, while shopping with Mr. FBBQ, I found this amazing rice mixture that has 6 different ingredients-black rice, brown rice, and two types of barley being some of them! I was super excited to use my new mixture in this dish!

Start by cooking your grains. This will mean three separate pots. Yes, this recipe uses a lot of pots and pans!Â

You can also use any variety of vegetables that you choose! I usually opt for mushrooms, onions (went with sweet Vidalia on this one), broccoli, and green beans. Steam the green beans and the broccoli. In a pan with some water, cook the mushrooms and onions.

Use the quinoa, rice, and lentils as the base. Season as you please (I used a citrus sea salt, an Up North grilling seasoning, and a Green Harvest one). Top with the veggies. Add some scallions if you like (I used them because Mr. FBBQ had leftover scallions from his recipe).

Let me know what other combinations you come up with!!
