You’ve heard of the Super Bowl? Well now you know the Sweets Bowl. Let’s do it!

I wasn’t sure what to call this one, but I do love me some sweet potatoes so Sweets Bowl it is! We will need more than sweet potatoes though. We will need some sort of lettuce (I opted for some red leaf lettuce, baby spinach, baby arugula, and pea shoots), a red onion, bulgur, little tomatoes, broccoli, a lime, some red cabbage, chickpeas, and an avocado. Interesting fact about red cabbage-it’s a member of the brassica family, along with brussels sprouts and kale. It’s high in calcium and folate. It helps reduce inflammation, strengthens bones, improves gut function, and keeps your heart healthy! Plus it’s pretty and crunchy!

Start by dicing the sweet potatoes and roasting them in the oven at 420 degrees for about an hour. While those are cooking, cook the bulgur on the stovetop in a pot. Steam the broccoli. Chop the red onion. Drain and rinse the chickpeas. Set all of this aside for now.

You’ll start by putting the greens in a bowl. Add the chopped onion.

Add the steamed broccoli, the cooked bulgur, the roasted sweet potatoes, and some avocado slices.

Add the little tomatoes and the chickpeas. Slice up some red cabbage and add that.

Squeeze the lime on top of the bowl and you now have a super bowl (not the football kind).
