Mr. FBBQ was not a fan of the length of the title of this post, but I couldn’t figure out a way to shorten it! I could’ve made it longer…Sweet Potato Quinoa Apple Lettuce Tomato Cucumber Seed Onion Dressing and Cheese Wraps! By the way, there is your list of ingredients.
Start peeling the sweet potato and dicing it into fairly small pieces. Steam the sweet potato. Cook the quinoa as well. Let both cool. This worked out well, as Mr. FBBQ needed to go grocery shopping so I went with him while the stuff cooled.
It’s really hard to find wraps without a lot of additives or gums. This one was the best I could do. It was good, but not big enough!
Start with some cheese slices and your choice of lettuce. Since I always do baby spinach, I opted for something different this time. I liked this mix of healthy greens! Add some pepitas, some flaxseed, some sunflower seeds, and some hemp seeds.
Next, add the cooled quinoa and sweet potatoes, some red onion, tomatoes, and cucumber.
Slice the apples as thinly as you can. Add those to the growing sandwich.
Top with a salad dressing of your choice (I opted for a fig vinagrette) and THAT’S A WRAP! (Cheese is not just for the sandwich)
