Sweet Potato Planks w/ Grilled Salsa

Hello everyone! I’ve been absent for a bit-travelled to Florida to visit my dad and get some sun. We went to the Florida Caverns State Park. If you ever get the chance to go, make sure you check it out! It was really cool! It was a 45 minute guided tour. I was hoping we would see a bat or two, but we didn’t. Still a very neat experience! Anyhow, I’m back and today I bring you some planks you will actually enjoy, not the ab-crushing type that kill you at the gym!

The title of this post is a bit misleading. The salsa is not actually grilled. The corn and beans are.

So, let’s get to it!

This will kind of be a two-part post. One will be the salsa, which I cannot believe I haven’t shared with you yet! The mango-cucumber salsa is my absolute favorite! Today, I’ll walk you through making it. To make the salsa, you’ll need mangos, a cucumber, a white onion, a lime, and some cilantro.

For the main dish, you will need sweet potatoes, an avocado, black beans, and some corn.

The base of the salsa

The salsa is super simple to make! Dice up the mango, onion, and cucumber. Mix them together, squeeze a lime over it, add chopped cilantro, mix up again, and you are good-to-go!

For the planks, slice sweet potatoes into discs. Line a baking dish with aluminum foil, pool some avocado oil into the bottom, lay the planks on top of the oil, brush the top of the planks with some oil, and cover with another sheet of aluminum foil. Bake the planks at 425 degrees until they are soft. This is usually about 45 minutes to an hour, depending on how thick you slice the potatoes.

Add the corn and the beans to a small pan. Grill them until they are a little bit charred.

Once the planks are cooked, remove them from the oven and blot off any extra oil. Top each potato plank with an avocado slice.
