Summer Squash Salad w/ Avocado & Pine Nuts

Guess what, Mrs. Fans!? Yesterday was national Avocado Day! in honor of this, today’s salad features avocado!

Mr. FBBBQ and friends decided to do a chicken wing smoke today so we all sat outside and enjoyed the beautiful summer day! While they were burning their mouth with hot sauces and destroying their health with processed meats and chemical-laden chips, I created this beautiful, healthy salad!

As a base, I used baby spinach and micro-greens. Specifically, sunflower and broccoli blend of sprouts that we got at the Farmer’s Market on Saturday.

As the pine nuts toasted (I didn’t burn them this time), I sizzled up the zucchini, yellow squash, mushrooms, and shallots in a pan. I asked Mr. FBBQ to put them on the smoker for me, but there was no room due to the poor, dead birds that were on there.

I arranged the greens in a bowl (as the cats enjoyed their dinner as well), topped the greens with the grilled summer squash, mushrooms, and shallots, added an avocado, and sprinkled with the pine nuts.

Lastly, I doused the salad in lemon juice, fresh squeezed of course! I enjoyed this summer salad outside with the carnivores.
