Strawberries, radishes, and lemons?! This is an interesting mix!!
What do we need for this delicious salad? Tofu! 12.3 oz of firm silken-style tofu to be exact! We will also need a lemon, sea salt, a shallot, arugula and baby spinach (my favorite mix), strawberries, radishes, and cucumbers. I also added some nuts for extra protein, walnuts and almonds.

Add the greens to a bowl. This will be your salad base. Top the greens with the strawberries, sliced radishes, and cucumbers. I also had little tomatoes on-hand, so I added these too!

To make the dressing, add the tofu, lemon juice, sea salt, and a finely chopped shallot to a food processor or bullet blender. Mix it up. It’ll be thick and you can add water as needed.

I still had some microgreens from a previous salad. I added these, topped the whole thing with nuts, added the dressing, and enjoyed the lemony-strawberry goodness!
