Strawberry Mozzarella Salad

Hello, everyone! Today I bring you a non-vegan Mrs. Mozzarella!  While I try to eat Plant-Based most of the time, I do enjoy cheese.  Most all other animal products I can do without.  This recipe did call for Greek Yogurt, which I would have substituted for something else had Mr. FBBQ not had some in the fridge that he bought for a recipe and wasn’t going to use.  Hate to let anything go to waste, especially with the food prices the way they are now! 

This salad was super simple and quite delicious!  I used baby spinach and baby arugula as the base.  The recipe called for strawberries, which I did use, but I also added some blueberries as well!  Lastly, I used little tomatoes and some fresh basil from my basil plant in the back yard.  And, of course, mozzarella pearls.

The dressing was super easy to make as well!  I mixed the Greek Yogurt with a bit of apple cider vinegar, olive oil, garlic powder and onion powder.  Whisked that all together and it turned out to be very good on this salad!

Once you mix up your greens and fruits and tomatoes, add in the basil, top with the dressing and the mozzarella pearls.  I had cucumber on hand, so I chopped up some of that and added it as well.

Lastly, I boiled some whole grain rotini and allowed it to cool then added it to the salad mix. 

Coat with dressing and you are ready to eat!
