Today’s dish is a great Fall dish (even though it’s almost Winter here in the Midwest). And it’s pretty easy to make! Let’s get started….

To start, peel and de-seed the squash, then dice it up. I put it in the vegetable steamer to soften it up. While it is steaming, slice up the zucchini and yellow squash.


Next, chop up the peppers and onion. Add the zucchini, yellow squash, peppers, and onions to a pan with water. Cook on medium until the water is gone and the veggies are slightly browned.

Cook the quinoa and use that as a base. Top it with the zucchini, yellow squash, onion, and peppers mix. Top that with the squash from the steamer and you are ready to eat!
