This post was originally titled Spiced Vegetable Couscous. Until Mr. FBBQ pointed out that I used quinoa instead of couscous. So I had to change the title! Oops! It still turned out good.

This recipe called for a mix of spices called Ras el Hanout. You can buy it pre-mixed or make your own. I opted to make my own. There are a lot of different recipes for Ras el Hanout. I used corriander seed, ground ginger, ground cloves, cinnmon, allspice, salt, pepper, and ground cumin seed.

Depending on what you choose to cook with, cook the couscous or quinoa. While these are cooking, steam the cauliflower and broccoli.

In a pan, add a small amount of water, diced onion, sliced bell peppers, minced garlic, and sliced zucchini. Add the broccoli and cauliflower once it’s softened up in the steamer.

Add chickpeas to heat them up. Mix together the veggies and the chickpeas. Season the mixture with the Ras el Hanout. Add some minced marjoram to the mixture. Lastly, squeeze a fresh lemon into the pan to coat the veggies and chickpeas. Mix everything together to coat all of it.

Use the quinoa (or couscous) as your base.

Top with the vegetable/chickpea mix and you are ready to eat your flavorful dinner!
