Happy Monday! This recipe is super simple and turned out SO GOOD with the roasted garlic and the crunch of the walnuts! Let’s get started!
Pretty simple ingredients-cauliflower, pasta (of your choice), garlic, walnuts, and some shaved cheese if you so desire. I also had a small amount of cooked mushrooms and onions leftover from a previous recipe that I decided to reheat and add to this dish.
Cook the noodles and dice the garlic.
I steamed the cauliflower for a bit before roasting it in the oven on a pan with the walnuts and garlic.
It came out perfectly! A little browned on the edges.
The noodles will be the base for this dish.
Top the noodles with the mushroom/onion mix (if you have it). It really added a bit more to this dish!
Then add the cauliflower, walnuts, and garlic. Some garlic powder would be really good on this dish as well. Mr. FBBQ has some homemade smoked garlic powder for sale if you are interested. You can reach out to him for details!
Lastly, add the cheese if you opted to use it.
This dish had great crunch and wonderful garlic flavor. Loved it!
