Orange-Glazed Sweet Potatoes

Happy Halloween all you Mrs. Marauders!  Hopefully everyone has a super-spooky Trick-Or-Treat day and gets to eat lots of candy!!  I wanted to present you with a special Mrs. Monday post that was Halloween-themed, since Mrs. Monday fell on Halloween.  This is the best I could do.  I had already bought the sweet potatoes for this recipe, or else I would have used pumpkin.  I also thought about doing Halloween-shape sugar cookies from scratch, but we have a lot of sweets in our house right now and I didn’t need to add to that. Seriously, you would think we were passing out candy based on the huge bowl of it in the house.  But no, it’s mine.  Mr. FBBQ enjoys it as well, even though he will deny it (I found a TON of candy wrappers in his office trash receptacle the other day).  Busted! So, I settled on sweet potatoes, figuring they are orange…

These were fantastic! I cannot wait to make these again!  They were easy to make, too!  Just be sure to leave yourself enough baking time-they require about an hour in the oven.

I’ll keep this post short and sweet (get it-sweet potatoes, sweet)?!  Mix orange juice, a little bit of allspice, maple syrup, and diced garlic in a bowl.  Whisk it together.  Slice up the sweet potatoes into cubes.  Smaller cubes cook faster.  You don’t have to, but I marinated the sweet potatoes in the mixture in the refrigerator for a couple of days.  This was primarily because I didn’t have the time to bake them until a few days later.  When the time comes to bake them, dump the whole mixture onto aluminum foil on a baking sheet.  Close up the foil around the potatoes and bake them at 400 degrees for an hour.  I served them up with some baby lima beans.  Mr. FBBQ even ate some (not the lima beans, the potatoes).

?ForensicBBQ commentary: Because Mrs and I often make different dinners because of our palates – I decided eating one of these meals was easier than making a meaty meal. This one was pretty damn good. I ate a lot of them. Quite a lot of them.
