So, you thought you’d seen the last of the soup posts for a bit? Nope! This soup is actually light and great for Spring or Summer! It’s super simple too! This is actually one of my favorite soups.
To start, we will gather our ingredients. I always like carrots and celery in soup, so I got those. I also used a sweet onion, whole wheat linguine pasta, vegetable broth and vegetable stock, some dill and parsley (dried).
Chop up the carrots, onions, and celery. Add these to a large pot with some water and simmer until the water runs out or the veggies are softened. Separately, cook the linguine. Add the vegetable broth/stock mix to the veggies, add the linguine, season it with the parsley and dill and you are good to go!
