Mrs Morning Mini: Creamer & Banana Oats

Hello all you Morning People!  And those of you like me who are not morning people, but still enjoy coffee and breakfast, just at a later hour!   Today’s post is a two-for-one!  I get a lot of requests for my recipe for homemade coffee creamer, so I figured I would post that.  Then, I found this delicious recipe on Instagram for these banana oats, so I thought I would give it a shot!

Homemade Coffee Creamer

We will start with the creamer.  I enjoy coffee.  Right now, I’m really enjoying Meow Mocha from Tabby Cat Coffee! Go to their website and check it out! They have different varieties of coffee, some great merch!  I just bought a tote bag and more stickers.  I also have the hoodie and it is my favorite-toasty warm and super comfy!  Also, percentage of their profits go to helping kitties! It is a great cause! And no, they aren’t paying me to advertise.  I just happen to love the cause and the coffee!  Plus, it’s kitties so you can’t go wrong. Back to topic-creamer.  I love creamer but I cannot stand all the preservatives and additives and chemicals in store-bought creamer!  Not to mention all the sugar.  So, I decided to make my own creamer! I did some searching for recipes online and made a hybrid recipe of my own!  At this point, until I can learn to drink my coffee black, it seems to be the healthiest option.  It’s super easy to make and one batch lasts me almost two weeks.

You will need one can of sweetened condensed milk, some non-dairy milk, light brown sugar, cacao powder, and vanilla extract.  Regarding the milk, I opt for chocolate almond milk because I really love chocolate, but you can use any variety of plant-based milk, plain or chocolate.  Mr. FBBQ recently accidentally bought me “extra-creamy” almond milk and I wasn’t too keen on using it in cereal but it works great in the creamer!  As far as the cacao powder goes, the recipes I found called for cocoa powder, but cacao is so much better for you and has wonderful health benefits, so I substituted that. Lastly, when buying vanilla extract make sure you buy the pure vanilla extract, not the imitation.

Empty the condensed milk into a pot.  Add the plant-based milk, 3 tablespoons of cacao powder, and 3 tablespoons of brown sugar.  Cook this on the stovetop over medium heat until all the ingredients are whisked together smoothly.  Remove from heat, add 2 teaspoons of vanilla extract. Whisk that in and allow the mixture to cool.  Keep refrigerated and shake well before use!

Banana Oats

Supervisor Pippa, disappointed that there is no cheese in this post. Nor real milk. Nor cat treats.

On to the oats!!  This was pretty simple to make. You’ll need ½ a cup of oats, 2 bananas, 1 tablespoon of maple syrup, 1 teaspoon of baking powder, a dash of cinnamon, and plant milk.  In a bowl, mix together the oats, one of the bananas (mashed), the maple syrup, the baking powder, and the cinnamon.  I am not a fan of cinnamon, so I put very little in there.  Lastly, add the plant milk and mix everything up.  Put this mixture into a Pyrex dish or other oven-safe dish and make sure the mixture is covered by the plant milk.  Top it with the second banana, sliced.  Bake this in the oven at 180 degrees for 18 minutes.  I should have eaten this fresh out of the oven, but I wanted to take it to work for breakfast.  I tried warming it up at work, but it wasn’t the same.  It smelled delicious when it came out of the oven.  It was still good, even mostly cold!!  This is a great Fall/Winter breakfast!!!
