Mrs Mini: Lentil & White Bean Wrap

Hey all! So today’s post is a super-simple, easy-to-make, healthy wrap! It’s great for a meal on-the-go or a quick lunch or dinner.  It’s actually filling as well, thanks to the fiber in the beans and the lenitls.  I had some flatbread wraps leftover from a previous recipe and was planning on using those for this meal. Unfortunately, they were moldy. Mr. FBBQ made a comment about how quickly my breads mold.  That’s because I buy fresh, preservative free breads with little or no additives.  I should have refrigerated them, but this causes them to go stale quicker.  It’s really a lose-lose situation if you don’t eat the breads quickly.  Anyhow, I went and bought fresh flatbreads and here we are!

This is going to be simple and delicious!

To start, spread some hummus on the flatbread. I opted for plain hummus, but you could really go with any flavor you like. 

Did you know-hummus is a great substitute for mayonaise? Much healthier!

Add some greens. I used baby spinach this time. I also like a mix of baby spinach and arugula.

Slice up some red onion and add the beans.  I used Northern Beans, but again, you can go with any white bean (or really any bean that you choose).

Next, add the lentils. You might want to cook them in advance so they are cold like the rest of the ingredients. 

This wrap is getting really full!

Lastly, I chopped the whole thing with little tomatoes, rolled it up, and cut it into four separate sections! 

Such a great mix of ingredients!
