Hello and welcome to another Mrs. Mini!!!! This super simple, healthy meal is delicious and filling! And, this time I got the avocado right! Perfect ripeness!! I’m quite proud of myself.

I promised super simple! So here we go! To start, you’ll need a flatbread wrap. I found these delicious, healthy wraps at Fresh Thyme (Midwest grocery store).

The next layer is the avocado. This one was ripe enough to spread a little, but still had some solidity to it.

Top the avocado smear with some greens. I used a mix of baby spinach, arugula, microgreens, and “power greens” (so the package claimed)!

Top the greens with some black beans.

Add some tomatoes, squeeze a lime over the whole thing, wrap it, and you are ready to eat!
