Moroccan Lentil Soup

Who doesn’t love a good lentil soup!? It’s such a simple soup and so easy to make.  In this case, the spices make the difference. They really add a nice kick to this soup.  So, lets get started. 

The End at the Beginning

We will need the following for this recipe: olive oil, onion, garlic, carrots, lentils, vegetable broth, cumin, garlic powder, chili powder, salt, pepper, and cinnamon.

The Necessities

As promised, this soup is really easy to make!  We start by putting a little olive oil in a pan and frying up the onions, garlic, and carrots.  Carrots were not part of the original recipe, but I thought we needed some color!

As the veggies simmer and saute, we can boil the lentils.  I chose a mix of green and brown lentils for this soup.

Mix the seasonings together.  I am not a huge fan of cinnamon, so I went light on the cinnamon.  Add the seasonings to the onions, garlic, and carrots in the pan and mix it up until everything is coated.

Once the lentils have boiled for about 20 minutes and the onion, garlic, and carrots are browned, we can add everything to a bigger pot and simmer it in vegetable broth for about a half-hour. 

Ready to eat!
