Hello everyone! I have a great soup post for you today! This soup is hardy and filling. Great for the cold weather! We will need vegetable stock and/or broth. Or both! We will also need lentils, potatoes (I opted for little redskin potatoes), an onion (I opted for Vidalia), diced tomatoes, dried parsley, cumin, celery and carrots , and spinach.
To start, add the chopped carrots, celery, and onions to a pot with some water and allow it to simmer. While that is happening, put the potatoes in the vegetable steamer to soften them up. You’ll also want to boil the lentils.
Once everything is done cooking, combine all of the ingredients in the large pot (once the water is gone from the carrots/onions/celery mix). Add enough broth to cover the soup, but not enough so it’s watery.
And then add the spinach at the last minute until it wilts. Then you are ready to serve this up! This recipe made enough for me to freeze some for later!
