Hello, everyone!! Hopefully y’all are making some summer plans! I know we are! I haven’t been cooking a lot of fancy stuff lately, but I wanted to post something. This little recipe was so simple to make and very filling! Plus I got to use the lentil pasta and the sweet potato pasta I had bought a while ago! These pastas are gluten-free and super healthy! There’s a variety of them as well. If you recall, I used the spinach pasta in the Zucchini Chickpea Saute in a previous post. There’s also a black garlic one I’ve yet to try.

You’ll start by boiling the pasta. These only take 3 minutes to cook. Excellent for a weeknight after work when you want something quick!

Next, add the veggies to a pan with some water so they don’t burn. You could really use any kind of veggie for this! I used red, green, yellow, and orange peppers, broccoli, and carrots. Add some Italian Seasoning and grill until they are tender. Add a can of diced tomatoes and allow that to heat up, mixing everything together.

Serve the veggies on top of the pasta and you have a tasty, colorful, healthy dinner!
