Lentil Salad with Lemon & Fresh Herbs

Mrs. Monday is back!! I’ve been slowed down by an Upper Respiratory Infection. Who gets sick in the Summer?! Me, apparently.  Finally got to make some good stuff this weekend though!  Today, I bring you a zesty little lemon salad!

You will need some vegetable broth, lentils, lemons, scallions, cilantro, mint, garlic, sea salt, black pepper, and arugula.

To start, cook the lentils in the vegetable broth.  Once the lentils are cooked, douse those babies with lemon juice from your fresh-squeezed lemons!  Add the scallions, cilantro, mint, and garlic.  Season with salt and pepper and serve over a bed of arugula (or, in my case, arugula and baby spinach).  Super simple!!

I do think this dish needed a little something more, but couldn’t think of what.  Let me know what you come up with!!!
