Lemony Spelt Salad w/ Brocolli & White Beans

Hello, Mrs. FBBQ fans! I have another delicious and easy-to-make recipe for you!  This one has rocketed to the top of my favorites list!  The dressing, containing maple syrup, lemon juice, and Dijon mustard brings a wonderful tang to the otherwise bland ingredients.  I also used one of my new spice mixes, bought for me by my wonderful Mother-In-Law.  It’s got a cat head on the lid, a cat face on the label, and a cat-themed name-I’m ecstatic!! In case you haven’t figured it out, I love cats.  (I love all animals, but cats are by far the best)

To start, we will need to gather the following ingredients:  A lemon, spelt, broccoli, white beans (I chose Navy Beans and Northern Beans), garlic (we were out of fresh garlic, so I had to use the emergency garlic from the fridge), maple syrup, Dijon mustard, and a shallot.

What the heck is spelt?  I Googled it and the first response was “past and past participle of spell.”  Well, that is not the definition I was looking for.  Ultimately, I found the relative definition.  Spelt is an ancient cereal grain that is widely grown in Europe. Spelt wasn’t so popular for a while (probably because it takes forever to cook), but it’s made a comeback!  Spelt is high in protein and fiber. It also contains gluten, so if you are intolerant, don’t try it.  Hopefully I spelt everything correctly!

Bad jokes aside, cook the spelt.  It took about an hour for this stuff to soften up.  I almost burned it by not putting in enough water.  Rescued it at the last minute. 

While the spelt is cooking (and cooking, and cooking), steam the broccoli.  I’ve added a photo of the famed vegetable steamer in action!

Lastly, add the maple syrup, Dijon, finely chopped shallot, and lemon juice to a bowl and whisk it together to create the dressing.

The spelt will be the base for this meal.  Top that with the beans, then the broccoli.  Coat with the dressing and add the cat spice (aptly named “Leopard” and containing Garlic, Basil, Oregano, Rosemary, Thyme, Lemon Peel, and Crushed Red Pepper).  Shoutout to Whisk and Whiskers in Berkley, MI for this fine feline spice blend!
