Happy Monday, Y’all! I am not sure what makes this salad Italian, but that’s what the recipe called it so I stuck with it! Lotta good stuff in here! Can’t wait for you all to try it!

We need greens! I used red leaf lettuce, pea shoots, baby arugula and baby spinach for this salad. We need beans! Cannellini to be exact. I’m all out of rhymes now. We also need some farro, little tomatoes, red cabbage (see last week’s post for some facts about red cabbage), and a balsamic vinaigrette (I went with a balsamic fig). Vinaigrette is one of those words I always have to look up the spelling of. And it stumps me every time. Like, why is that extra “i” in there? Anyway, continuing on with our recipe, I had bought some celery for a different recipe and was not going to use all of it, so I added it to this dish.
MrFBBQ Addition: She asked what made it Italian earlier? It was the extra “i” for Italy that they add to vinaigrette. You’re welcome. (Don’t fact check this)

The greens will be the base. Next, we add some color!

I had a small can of black olives that I decided to throw in here at the last minute. Mr. FBBQ had some leftover bell peppers that he wasn’t going to use, so I diced those up and they went in as well. You can also add some red onion and the little tomatoes.

Add the celery, the cabbage, and some slices of avocado. I also threw in come cucumber. Add the beans as well.

So, as you all know, my posts are vegetarian. However, yes, you DO see meat in this one. It made me laugh so I had to add it. Mr. FBBQ had made pulled pork for my dad who just returned from Florida. Obviously, he kept some for himself. As he was preparing himself a pulled pork sandwich, Bubbles decided she wanted some pork as well and stole it right out of the dish. She was CRAZY for that cooked pig! For the next couple of nights she had to check out what we made for dinner just to see if there was any more pork for her. Don’t tell Mr. FBBQ, but I slipped her a few pieces out of the container in the fridge. Shhhhh.
