
Hey y’all! This recipe was called Green Lentil Spoon Salad. I can honestly say I did not use a spoon to eat this salad. So that was removed from the title. And, since the lentils are the least green thing in this salad, I simply changed the name to Green Salad. Everything in this salad is green! Mr. FBBQ tried to get me to cheat and put tomatoes on the salad but I didn’t cave! Even though every salad is better with tomatoes!
So, I used baby spinach, baby arugula, sprouts, broccoli, celery, cucumbers, Brussels sprouts, green onions, and green lentils. There is a zucchini in the picture but I opted to save that for a different dish.

You’ll want to cook the lentils and the Brussels sprouts the night before so they are cold for your salad.

The spinach/arugula/sprouts will be the base for this dish. Add the lentils. Add some scallions (also known as green onions).

Add the Brussels sprouts, the celery, the broccoli, and the cucumbers.

Add some sliced avocado and some pepitas. I added some dressing to the salad. You can use whatever you choose but I might suggest a vegan Green Goddess!
