As a special request from Mr. FBBQ’s New Hampshire friends, I made a really delicious tabbouleh! I brought some of this to work and it was a huge hit!
For those of you who have had tabbouleh, this is nothing like the traditional recipe. Traditional tabbouleh is a Lebanese salad made with parsley, bulgur, lemon juice, olive oil, mint, tomatoes, and scallions. You can often find it in the prepared foods section of your grocery store. I love tabbouleh, so making this version of it was a fun challenge!
Our ingredients include cucumbers, avocado, bulgur, chickpeas, scallions, mint and parsley, and a grapefruit.
We can start with the grapefruit, because this was the biggest challenge (as well as the messiest). First, peel the grapefruit. Once you are left with the sections of flesh, you’ll need to essentially unwrap the flesh from the thin membrane surrounding it. Do so over a bowl, because you want to preserve the grapefruit juice as well. Once you have peeled all the grapefruits, you can start chopping veggies. Finely chop the cucumber, avocado, and scallions. Add these to the grapefruit bowl. Next, add the chickpeas. Next, chop the mint and parsley into teeny tiny fine little bits. Add that to the grapefruit bowl.
Lastly, add your cooked bulgur to the grapefruit bowl and mix everything together!
Enjoy with some whole grain pita or crackers!!
