Garlic Smashed Potatoes w/ Veggies

There is nothing better than fresh vegetables

Hello everyone!! I’m back with a hearty, filling post! A potato post! I opted for baby red potatoes and yukon golds but you can use any type of potato for this dish! We also need garlic, Brussels sprouts, the zucchini (saved from the previous Green Salad post), and broccoli.

Soft taters

Steam the potatoes. There’s a lot of steaming involved in this dish, so you’ll need a decent amount of time to complete it.

Chop up a lot of garlic in fairly large pieces

While the potatoes are steaming, you can chop up the garlic and slice up the zucchini. I should have had Mr. FBBQ smoke the garlic for me but I didn’t think of that in time. I cooked it in the pan when I was done with the zucchini. You could also roast it in the oven. But, again, not enough time for this post.

Smashed and mashed

Once the potatoes are done steaming transfer them to a bowl and smash them up with a fork. Cook the zucchini in a pan with some avocado oil.

Once the potatoes are done in the steamer, add the Brussels sprouts and steam them next!

The broccoli turned out a beautiful green color and were cooked to perfection

To put this dish together, use the potatoes as a base. Add the zucchini and the garlic.

Next, add the Brussels sprouts (after cutting off the stems) and the broccoli.

It even looks delicious

Top the dish with some scallions.

Very fulling meal!

You can add some seasoning to the final dish. I did so and it added some excellent flavor!!
