Happy Monday, Mrs. BBQ fans!! Mr. and I have been taking advantage of Summer and travelling a bit, so I haven’t posted much. I leave for my next adventure (sans Mr.) this week-backpacking Isle Royale National Park!! Stay tuned for a post-backpacking meal review (and some outstanding photos)!
Today I bring you the Monday Mrs. Mini, just a quick little post on one of my faves. Mr. FBBQ decided to smoke some corn-on-the-cob this weekend (along with some meat thing), so I decided to make myself garlic roasted potatoes in our new oven!!!
These are so simple! Spread aluminum foil, enough to eventually fold up and contain your diced potatoes. Next, (you guessed it!) cut up some little red skin potatoes. You can use Yukon Gold too, if you please. The smaller the cube, the quicker they will cook.
Combine the potatoes in a small bowl, along with some olive oil, sea salt, pepper, and any other seasonings of your choice (ironically, I used one from Meat Church). Chop some garlic and add that to the bowl as well. Mix everything up together. Put your potatoes on the foil and fold it up.
Bake at 425 for about an hour.
