Farmer’s Market Salad w/ MI Cherry Dressing

Hello, Mrs. FBBQ friends!! I have a treat for you today!  All of our ingredients are fresh from the Farmer’s Market or made locally!! 

The salad

Mr. FBBQ and I hit the Farmer’s Market on Saturday and brought home the mother lode!   I got so much fresh fruit and tasty vegetables!  I decided to use most of it in this salad!

To start, I washed everything. Even though things are local or organic, you still want to wash them.  There may be residual dirt or other particles on the item.  I peeled the carrots and chopped them into tiny bits. The cucumbers were sliced (and some were added to my fresh iced tea).  The peppers and broccoli were chopped.  The strawberries were quartered.

As a base, I used baby spinach, broccoli and sunflower sprouts-all from the Farmer’s Market!!! I added the carrots, cucumbers, peppers, broccoli, and some little tomatoes.  I also added the chopped strawberries, as well as blueberries, blackberries, and raspberries-ALL FROM THE FARMER’S MARKET!!!!  I also added some radishes that I had on-hand, as well as a little flaxseed and sliced almonds for crunch. I topped this off with some fresh-cut (you guessed it, Farmer’s Market) scallions!

The best find was the Michigan Cherry Vinagrette that I found at a local market.  It’s getting close to cherry time here in Michigan and this dressing was superb!

Once I mixed everything up, I enjoyed this salad with a slice of fresh baked whole grain sourdough bread (ALSO FROM THE FARMER’S MARKET)!!!!
