We have reached salad number seven! This was another super easy one to make! I had to send Mr. FBBQ out to get me some bulgur. He likes hunting down obscure grains. For those of you that don’t know, bulgur is a type of wheat cereal. It actually reminded me of steel cut oats (texture-wise).

This recipe didn’t actually call for any salad greens, but I decided to add them for a good base. I used baby spinach, baby kale, and baby arugula. On top of this I added chopped cucumbers (fresh from my wonderful Forensic BBQ in-laws) and little tomatoes. Of course, we had a little tomato tragedy when I opened the container and they went tumbling all over the kitchen floor. The dog thought they were treats for him and one of the cats watched with interest as I scrambled to gather them all up. Quite the comedy show. I added chives and threw a bit of garlic in there because everything is better with garlic!

For the dressing, I drizzled on some red wine vinegar and squeezed the juice from a fresh lemon over the top.

I cooked the bulgur, making a big ‘ol mess on our brand new stove. Gotta break it in somehow! 3/4 cup of uncooked bulgur makes quite a bit of cooked bulgur! I added the cooked and cooled bulger to the top of my salad mix. I topped that with some chopped tarragon.
This tasty salad took me about a half-hour to make. It was a great weeknight dinner!!!
