Cauliflower w/ Mixed Grain Pilaf

Happy Mrs. Monday! Today, I am bringing you an absolutely delicious meal! It’s got a lot of different parts to it, but that’s what makes it great!! Our ingredients are: Vegetable broth, apple cider vinegar, a mix of long grain and wild rice, barley, mushrooms, beans (I used kidney beans), cauliflower, bell peppers, an onion, dried parsley, dried thyme, and walnuts.

Peppers, onions, mushrooms, and a little bit of seasoning

Add the mushrooms, diced up bell peppers, onion, and water in a pan and simmer it. Add the seasonings towards the end. While this is going on, add the vegetable broth to a pot and simmer the rice and barley in it for about 30 minutes. Keep adding broth as needed.

Red beans and cauliflower (in the steamer).

Steam the cauliflower in a vegetable steamer.

Add the beans to the mushroom, onion, and pepper mix…

Near the end of the simmering of the mushrooms/onions/peppers, add the beans.

Add the cauliflower…

Use the rice/barley as a base for the meal. Add the cauliflower.

Toast the walnuts.

To the rice and cauliflower, add the beans/onions/peppers/mushrooms.

I really, really enjoyed this dish!

Top with the walnuts and enjoy!

Enjoyed it even more with the toasted nuts on top! Added some great crunch!
