Caribbean Black Bean Soup w/ Mango Relish

I must say the Caribbean sounds pretty amazing right now. We are mid-winter here in the midwest. But, if we can’t have warm weather we can have Caribbean Black Bean Soup!

Yep, that is pumpkin spice seasoning you see in there.

For this dish we need black beans, bell peppers, garlic, a sweet potato, brown rice, a sweet onion, scallions, a mango, pumpkin spice, vegetable broth, thyme, and cilantro.

Sweet Potato Post-Peel

After peeling and cutting the sweet potatoes into cubes steam the cubes. While this is happening, cook the brown rice in the vegetable broth.

For the Mango Relish

To make the mango relish, peel the mango and slice it into small cubes. Slice up the scallions. Dice the cilantro. Mix these ingredients together.

In a large pan cook the diced bell peppers, onions, and garlic. Add the thyme.

Pan o’peppers (and other stuff)

Drain and rinse the black beans and warm them in a small pot.

The rice will be the base for this dish. Top that with the peppers and onions.

Add the black beans.

Coming together nicely.

Add the sweet potatoes. Sprinkle the sweet potatoes with the pumpkin spice.

Lastly, add the mango relish and you are ready to eat!
