Butter Lettuce Salad w/ Basil Yogurt Dressing

Mr. FBBQ: “I have extra Butter Bibb lettuce. Do you want it or should I give it to the deer?” Me: “I have a recipe for that!” (Sorry, deer).

Utilizing Mr. FBBQ’s extra Butter Bibb lettuce, I mixed up this super healthy salad for dinner after Mr. FBBQ and I spent a week up north eating like crap. To start, I gathered the ingredients: grapeseed oil, sherry vinegar, honey, greek yogurt, basil, scallions, a lemon, tomatoes, Butter Bibb lettuce, Pea shoots, snap peas, carrots, broccoli, cucumbers, and, at the last minute, I decided to throw some colorful peppers in the mix!

I started by mixing up the salad portion, adding the lettuce and pea shoots as a base, then topping that with the chopped carrots, cucumbers, scallions, tomatoes, broccoli, peppers, and snap peas.

For the dressing, I blended the yogurt, sherry vinegar, honey, grapeseed oil, lemon juice, and the basil leaves until smooth.
