What is a Buddha Bowl? Basically, it’s a vegetarian meal that is supposed to consist of several different small portions of grains (or, in this case, lentils), vegetables, a protein such as chickpeas or tofu, a sauce or a dressing, and any variety of topping. In this case, I chose to use lentils instead of grains because I’ve been using a lot of grains in my recipes lately and it’s been a while since I’ve had lentils! As far as veggies, I opted for sweet potatoes and cauliflowers, as well as avocado and baby spinach for the topping. I didn’t have any tofu on hand and I opted to skip the chickpeas because I already had a lot of ingredients in this dish!!
We will start by cooking the lentils. Also, add the sweet potatoes to the vegetable steamer until they’re soft. Once the sweet potatoes are ready, switch them out with the cauliflower.
Once the cauliflower is nearly cooked, add the baby spinach to steam until wilted.
Once the lentils are done cooking, drain them and set them aside.
Scoop out the avocado and slice it.
The lentils will be the base for this dish.
Add the sweet potatoes, the cauliflower, and the baby spinach.
Add the avocado.
Lastly, add a dressing. I opted for a Dijon Mustard Vinagrette. It added a zingy flavor to the dish.
