Brown Rice & Asparagus Salad w/ Cauliflower & Peppers

Hello friends!! The original recipe for this one was simple. Brown Rice. Asparagus. Lemon. I added a lot of extras!!!

Let’s get our ingredients together!! Does anyone recognize the brand of brown rice? It’s not a midwest brand. I actually bought it in Florida when I was down there with my dad (he’s a snowbird). It’s Publix brand! I do love me some Publix! I also bought two Publix Ducks for my Jeep!! Anyway, in addition to brown rice, we need asparagus, a lemon, some bell peppers, tofu, cauliflower (which I actually bought for an upcoming post but had a lot so I decided to utilize some of it for this dish), and (buried under the peppers in the picture) is a partial white onion that Mr. FBBQ had used in one of his posts that I decided to finish off.

Pre-assembly

I didn’t get many “action” photos of things cooking. But above you will see the finished products before I put them all together. I’ll also walk you through it.

Cook the rice. While that’s simmering (and overflowing and making a mess of the stove), steam the asparagus. I prepped everything the night before-so the asparagus, peppers, and cauliflower were all washed and chopped into bit size pieces. You can also add the peppers and onion to a pan and cook them until they brown. Once the asparagus is soft, switch the cauliflower into the vegetable steamer. Once the peppers and onions are browned, switch the tofu into the pan. You can season it with Tamari sauce. Cook the tofu until it’s browned.

The rice will be a base for this dish.

Add the asparagus.

Next, peppers and onions

Add the peppers and onions on top of the asparagus.

Cauliflower

Then the cauliflower. There’s a lot to this dish!

Tofu topper

Lastly, add the tofu and squeeze a lemon on top of the dish for some tangy flavor!
