It’s here!!! Seven Salads of Summer salad number 5!! This recipe was actually titled Grilled Peach and Blueberry Pasta Salad. However, due to the fact that I was bringing this salad on a camping trip with Mr. FBBQ, I thought the peaches might not retain their grilled goodness, so I substituted them with little tomatoes. You can use cherry or grape tomatoes-or give it a shot with the grilled peaches!! I’ll have to make this again with the peaches, it sounds delicious!
I started with whole grain pasta. I happened to have bow-tie pasta on hand, so I went with that. While that boiled, I made the dressing. This involved mixing lemon juice (from fresh squeezed lemons, of course), Dijon mustard (much to Mr. FBBQ’s disgust), and garlic. I used a whisk to blend them and set this aside.
Arugula and baby spinach made up my greens for this salad. I added the cooked and cooled pasta to the greenery and tossed in some blueberries and little tomatoes. Next, I covered it with the dressing and tossed well to coat everything. The lemon gave this dish quite a zip and I really enjoyed this salad!
