Basmati Rice Bowl w/ Spiced Cauliflower, Pomegranate

This dish was pretty simple to make and the pomegranate arils added some sweetness. We will need cauliflower, Basmati rice, ground turmeric, garlic, an onion, ground cumin seed, and cinnamon.

Farmer’s Market bounty

Steam the cauliflower to soften it up. Dice the onion and add it to a pan. Season it with the cumin, cinnamon, and turmeric. Cook the onion.

Once the cauliflower is soft, line a baking sheet with aluminum foil. I had some leftover sweet potatoes and chickpeas that I decided to add to this dish. Bake the cauliflower, sweet potato, and chickpea mix until the cauliflower starts to brown.

Cook the rice.

Top the rice with the onions.

Add the cauliflower mix to the dish.
