Hello, friends! I’m not sure why this is called a picnic bowl. Maybe because it is good to eat hot or cold? Either way, it was quite delicious! And I had a lot of leftovers, so I was able to eat it both hot and cold!
To make this dish we need some barley, corn, a red onion, red potatoes, apple cider vinegar, butter beans, parsley, bbq sauce, Dijon mustard, and dill pickles (the last two I forgot to put in the picture). I was pretty excited because I got to use the parsley I’ve been growing this year! I love home-grown vegetables!
To start, we have to cook the barley. While that is cooking, I boiled the corn (since I used frozen corn). You’ll also want to steam the potatoes. My trusty vegetable steamer that I’ve had for years finally called it quits. I have a new, teeny tiny one that I absolutely love! Much more convenient to use and store than the other one. Obviously, it holds less, but considering I usually just cook for me that doesn’t matter.
Add the beans, parsley, and a finely chopped dill pickle and a finely chopped red onion to a bowl. Add the corn. Once the barley is done cooking, add that.
Once the potatoes are cooked thoroughly you can add them to the bowl as well.
Top with little tomatoes. I was pretty excited earlier this week. One of my tomato plants finally yielded enough little tomatoes for a whole dish! They were so good! One smell I absolutely love is the smell of a tomato plant. Does anyone know what I’m talking about? Someone should make a candle that smells like tomato plant! For all of us weird tomato plant sniffers out there.
Next, we will make the “dressing.” This was so simple. Two ingredients. Dijon mustard and bbq sauce. Mix em together.
Top the contents of the bowl with the dressing.
Mix it all together and you are ready to enjoy this fairly simple dish! There are a lot of different flavors to this dish. The dill pickle and bbq sauce specifically. It all went together quite nicely. I’ll definitely make this dish again!
